Subject: Crab Casserole Lines: 28 CRAB CASSEROLE' (Upper Bay Philharmonic) 2 lbs Crab flakes and chunks (can use imitation) 12 slices white sandwich bread (cubed about 1/2") allow to set out and dry a little 7 hard cooked eggs, chopped 2 Tablespoons onions finely minced & sauteed slightly 2 Tablespoons parsley, minced 1/2 teaspoon each salt and pepper Mix and spread out in 9 x 13 pyrex dish 2-1/2 cup Miracle Whip or Mayonnaise 2-1/2 cups milk Blend until smooth (someone's note said to cut in half Mayonnaise and Milk) Pour over crab mixture Cover with grated cheddar cheese Cover tightly with foil. Refrigerate overnight Remove 1 hour before baking Sprinkle crushed corn flakes (or any cereal) on top Bake at 325 degrees for 45 minutes. Important: Let sit out for 10-15 minutes to firm up before serving. (12 -15 servings) Subject: COLLECTION: Casserole recipes Lines: 58 Here is a revised recipe for Chicken Divan (taken from a Campbell's Soup Can). 1 lb frozen broccoli spears (cut in half) 1 1/2 cups of cubed cooked chicken 1 can of Campbell's creamy chicken mushroom soup 1/2 cup of sour cream 1 cup of chicken broth 1 - 1 1/2 cups of buttered bread crumbs Chicken: I usually boil breasts and thighs (with the skin on and slightly) salted) and reserve the liquid for the broth. Remove the skin before cubing. Broccoli Spears: Microwave on high for about 5 minutes before placing in the baking dish Bread Crumbs: I usually just microwave two good sized chunks of butter and stir in the breadcrumbs until I get the desired consistency. In a 9 x 13 glass baking dish place the broccoli spears so they completely cover the bottom. Place cubed chicken on top.In a large saucepan, combine soup, sour cream, and chicken broth. Stir well. Pour over chicken. Bake at 350 for 20 minutes. This is one of the easiest dishes I have ever made. The part that takes the most time is the chicken, but this can be boiling while you get the broccoli and breadcrumb mixture ready. ___________________________________________________________________________ Broccoli Casserole This is also a revised recipe that I got from my roommate. It doesn't have any meat and may be too loaded in cholesterol for your children, but it is very good. I have eaten as a main dish for lunch. 2 pkgs of frozen chopped broccoli 1 can Campbell's cream of mushroom soup 1 cup mayonnaise (use Hellmann's - Miracle Whip does not work as well) 2 eggs 1 cup of grated cheese 1 cup of diced onions 1 cup of buttered bread crumbs Again, microwave the broccoli on high for 5 minutes before mixing with the other ingredients. Combine all of the ingredients except the breadcrumbs. Pour into a rectangular or round glass baking dish. Cover with breadcrumbs. Bake on 350 for 30 minutes (or until you can stick a knife through and the mixture is moist but not runny). Another easy one. I know the mayonnaise and eggs seem redundant, but it does give the casserole the consistency that I like. You can try it without the eggs and see which consitency you like better. You can also alter the amount of mayo to cut down on the high cholesterol content. Subject: Cheesy Chicken Casserole Lines: 45 Title: Cheesy Chicken Casserole Categories: Chicken, Casserole, Main dish, Low-cal, Low-fat Yield: 6 servings 1 8oz pkg light cream cheese -softened 1 10-3/4 oz, can reduced -sodium condensed cream of -chicken soup 2 c Chicken, cooked and cubed 1/3 c Parmesan cheese 1/8 ts Garlic powder Nonstick cooking spray 1 1/2 c Skim milk 1 16oz pkg frozen mixed -vegetables thawed (such as -broccoli, cauliflower and -carrots) 1 c Quick-cooking brown rice 1/4 ts Pepper 1 tb Roasted wheat germ Spray a 2-quart round casserole with nonstick coating. Place cream cheese in the casserole; stir in the milk. Stir in the soup till well blended, then add the thawed vegetables, cooked chicken, uncooked rice, half the Parmesan cheese, the pepper, and the garlic powder. Bake, covered, in a 350 degree oven for 30 minutes. Stir. Sprinkle with the remaining Parmesan cheese and the wheat germ. Bake, uncovered, about 20 minutes more or till heated through.
