Trim the beans and cut each one in half.
Chop the chili into small pieces.
Heat the pan until it is very hot. Add the oil. Fry the beans and remove after 30 seconds. Drain the oil away.
Heat the oil in the pan, add the chopped garlic, ginger, pork, and dried shrimp, and stir-fry until fragrant (about 30 seconds).
Add the seasonings and beans to the pan and sautee for a further 30 seconds.
Add the soy sauce and water and simmer over low heat until the sauce has almost evaporated.
Add the sesame oil and vinegar and sautee for a short while longer over high heat. Serve.
