Happy President's Day (at least for those of you in New Mexico).
I started my day out right, with a huge wad of beef tallow in the pan.

The day before President's Day is always made most special by the trinity of holiday foods: mashed potatoes, stuffing, and gravy. To make gravy, you need fat and juice.
