Mom's Granola

6 c. old fashioned oats (see note)
1 c. chopped walnuts
3/4 c. wheat germ
1/2 c. coconut
1/2 c. brown sugar (optional)
1/2 c. almonds
1/3 c. sesame seeds
1/3 c. sunflower seeds
1/2 c. canola oil
1/3 c. honey
2 Tbsp. vanilla
dried fruit (optional)

Note: Do not use quick oats. I like to use a mix of barley, wheat, Kamut, and/or rye flakes in addition to some oatmeal.

In a big, flat pan, toast the oats/flakes in 325 degree F oven for 10 min. or more. Remove and add all the ingredients to the liquid ones, which are mixed together and heated. Pour over the oat mix and stir well. Bake in 325 degree oven for 25 min. or more, stirring every 10 min. Remove from oven and stir to avoid sticking. When granola is cool you can add raisins or other dried fruit pieces like papaya, pineapple, or apricots.

This recipe came from my mother, Katy Blakslee, and I have adapted it to include my own preferences over the years. I usually leave out the coconut and brown sugar.
