Pesto
- 4 lg garlic cloves, peeled
- 40 basil leaves
- 1 t salt
- 1/2 t fresh ground pepper
- 1/2 C grated parmesan
- 1 med tomato, peeled, seeded, and cut into 8 pieces
- 1 c extra virgin olive oil
Put garlic, basil, salt, and pepper in blender or food processor and process to a fine paste.
Add the parmesan and process for another second.
With machine rumming, slowly add the olive oil and process until smooth.
